Our olive oils are produced and bottled inour sophisticated ecological mills, wheretechnology meets the tradition provided byancient stone mills. All waste is recycled andreintroduced into the land, thus improving thestructure and fertility of the soils of our olivegroves.Each parcel of grapes from our vineyards isvinified, aged and bottled in our own cellarsaccording to the latest technology, while traditionalvats are used for fermentation.We also produce a line of “gourmet” specialtiesand vinegar, organic honey and premium almonds.All products are available directly fromthe CARM premises, in Almendra.

Winemaking

The area of production of CARM Olive Oils, lies at the heart of the Upper Douro, which is one of the areas in Portugal with more natural aptitude for excellence in olive growing, thanks to the nature of the schist soils very poor exposures of olive groves and dry climate, characterized remarkable differences in temperature between summer and winter. The olive groves are situated at altitudes between 150 and 450 meters above sea level. For the oil CARM Classic selected from the best olives Cobrançosa, Madural, and Negrinha Verdeal.

Tasting Notes

The aroma is very clean and fresh olive dominated by notes of apple and artichoke. The taste is elegant with a long finish of dried fruits.

Store and serve advices

This is an entirely natural product; in low temperatures precipitation may occur. This does not affect the quality of the product. Olive oil should be stored away from direct light and heat.

Food Pairing

For people looking for a genuine product full of flavours. Should be used cold, ideal for boiled vegetables, cooked steamed or grilled, or for example in pasta dishes accompanied only with fresh herbs.
